Hebridean Oatmeal Raisin Cookies

These make the perfect treat. Why not bake a big batch and share them with the whole family.

Ingredients

This recipe include 1/4 tsp of our PureSea Natural

1 ½ cups rolled oats
¾ cup whole-wheat pastry flour
¼ tsp Seaweed

½ cup chopped walnuts or almonds
½ cup raisins
½ cup desiccated coconut

2 tablespoons safflower oil
½ cup water
¼ cup rice syrup
¼ cup barley malt syrup

Method

Mix the oats with the flour, ascophyllum, walnuts, raisins and coconut in a bowl. Add the oil and mix well. Add the water and mix thoroughly until you have a thick batter and then add the rice syrup.

Pre heat the oven to 190/375deg. Line the baking trays with parchment paper and spoon the batter, a tablespoon at a time onto the sheet leaving about a 2-inch gap between. Pat down the mixture to form patties about ¼ inch thick. Bake for 25 minutes until golden brown.
